Fondant Glazed Petit Fours
These pretty pastel-coloured petit fours are reminiscent of Easter flavours and colours.
INGREDIENTS
Cake
200 g marzipan
¾ cup unsalted butter, at room temperature
¾ cup sugar
4 large eggs, at room temperature
¾ cup cake and pastry flour, sifted
½ cup raspberry jam (for assembly)
Rolling Fondant
⅓ cup cool water
1 Tbsp 1/4 tsp agar agar powder
½ cup white corn syrup
2 Tbsp vegetable shortening
1 Tbsp glycerin
4 ½ - 6 cups icing sugar, sifted
Clear vanilla or almond extract
Pouring Fondant
8 cups icing sugar, sifted
⅔ cup hot tap water
½ cup white corn syrup
1 tsp glycerin
Clear vanilla or almond extract
Food colouring paste
